What Makes It Specialty Coffee
Specialty coffee is defined by quality at every stage — from farming and processing to sorting and evaluation. It is not a style or a roast level, but a measurable standard.
The global benchmark for coffee quality is set by the Specialty Coffee Association (SCA). Green coffee is evaluated on a 100-point scale that considers aroma, flavor, acidity, body, balance, and overall impression. Only coffees scoring 80 points or higher are classified as specialty grade.
We include the SCA cup score in each coffee’s description because it provides a clear, objective reference for quality. While a score does not describe flavor on its own, it reflects the care taken from farming through processing and the overall condition of the green coffee.
By sourcing only specialty-grade coffees that meet this standard, we start with high-quality green coffee and can focus on roasting to bring out balance, sweetness, and clean, well-defined flavors in the cup.
